  • Non-stick baking tray

  • Blender or food processor

  • Mixing bowl

  • Knife for peeling and cubing the watermelon

  • Cutting board

  • Measuring spoons

  • Bowl cover or plastic wrap (to cover the mixing bowl during marination)

  • Refrigerator (for marinating the watermelon)

Ingredients

  • 1 Medium-sized Watermelon, seedless, if possible, peeled & cubed


Marinade:

  • 2 tsp white miso

  • 6 tbsp light Soy Sauce

  • 2 tbsp Rice Vinegar

  • Juice of 1/2 Lime

  • 1 clove Garlic

  • 2 Spring Onions/Scallions

  • 3 tbsp Sesame Oil

  • 3 tbsp seaweed (e.g., nori

    or wakame)

Preparation

  1. Preheat your oven to 180°C (350°F).

  2. Add the cubed watermelon to a non-stick baking tray.

  3. In a blender or food processor, blitz the marinade ingredients until smooth.

  4. Pour half of the marinade over the watermelon cubes on the baking tray and toss to ensure they are well coated.

  5. Place the watermelon into the oven and bake for around 1 hour and 10 minutes. Stir the trays halfway through cooking to ensure even marination.

  6. Once cooked, transfer the watermelon cubes to a mixing bowl and pour the remaining marinade over them. Stir well to ensure all the pieces are coated in the marinade.

  7. Cover the bowl and refrigerate it for at least 1 day to allow the watermelon to absorb the flavors of the marinade.

  8. Now, your vegan watermelon "tuna" is ready to be used in sushi rolls or enjoyed as a refreshing and flavorful plant-based alternative to traditional tuna.
