Ingredients
Homemade Watermelon Tuna
2 spring onions/scallions, finely chopped
Sesame seed
Crispy Rice Paper and Nori Bites:
Rice paper sheets
Sheets of nori seaweed
Frying oil

CRISPY RICE PAPER AND NORI BITES:
Preheat your oven to 180°C (350°F). Meanwhile, prepare a heavy-bottom pot and add 2.5-5 centimeters (1-2 inches) of frying oil. Heat the oil to 190-195°C (375-380°F).
Cut the rice paper into quarters. Each quarter will be the base for your crispy bites.
Take a sheet of nori seaweed and quickly dip it into a plate of water. Press it firmly onto a rice paper quarter until they stick together beautifully.
Fry each prepared rice paper and nori bite immediately for about 5 seconds in the hot oil. This will make them puff up and turn crispy. Be sure to fry in batches and not overcrowd the pot.
Drain the crispy rice paper and nori bites on a rack, showcasing their golden perfection.
