Because there are never too many pumpkin-based recipes... And that burgers are always a good idea ! 


What does a burger look like in Autumn 🍂 ? 


I made homemade vegan brioche burger buns and baked the 'pumpkin' shaped buns. They turned out pretty cute, didn't they? This Vegan burger contains a slice of butternut squash, homemade red bean patties, mushrooms, spinach and red onion, a slice of vegan Cheddar and a black garlic sauce on top.

Ingrédients

  • Mixing Bowl

  • Mixing Utensil or Hands (for mixing the patty ingredients)

  • Measuring Utensils (for precise measurements)

  • Non-stick Pan (for cooking butternut squash slices and mushrooms)

  • Cooking Oil (for sautéing and frying)

  • Spatula (for flipping and transferring patties)

  • Blender or Food Processor (for mixing the black garlic sauce ingredients)

  • Knife (for cutting butternut squash and other ingredients)

  • Cutting Board

  • Lid (for melting vegan cheese on burgers)

  • Frying Pan (for cooking burgers)


  • Serving Plate

  • Garnish (such as spinach)


Optional: Extra Vegan Butter (for toasting buns)

Ingrédients

  • 2 slices of butternut squash

  • 4 mushrooms

  • 5 cloves of black garlic

  • 1 tsp Mustard

  • 10 cl Soy cream

  • 1 tbsp Nutritional yeast

  • 1 tbsp Olive oil

  • 2 Burger buns

  • 2 Slices of vegan cheese

  • 1/4 Red onion


  • 2 Vegan patties:

255g Black beans

45g Rolled oats

40g Melted coconut oil

1 tbsp Monosodium glutamate

1 tsp Psyllium

1 tsp Worcestershire

2 tbsp cornstarch

1 tsp Nutritional yeast


  • Spinach

  • Black pepper

  • Salt

Préparation





for the patties
  1. Mix all of the ingredients of your patties until it’s incorporated, but as still some texture (you could also do it by hand)

  2. Form them into two even patties and set them aside 


for the black garlic sauce
  1. Mix you garlic cloves, soy cream, nutritional yeast, olive oil and salt & pepper together until it’s all pretty and creamy then set aside 


to make the burger
  1. Cut two thin slices of butternut squash and cook them on both sides

  2. Next place another non stick pan over a high heat & add a little oil followed by the cut mushrooms, sauté them for 4-5 minutes, the add salt and pepper. When they’re caramelised they’re ready. Remove them from the pan, ready for when you build the burgers.

  3. When I am ready to serve, I like to add a little extra oil to a frying pan and cook the burgers. Fry the burgers for 3 minutes on each side & once they’re cooked top with vegan cheese. Place a lid on the pan to help the cheese melt.

  4. Don’t forget toast your bun with a little extra vegan butter.

  5. Build your burgers making sure to add plenty black garlic sauce, onions & mushrooms. I garnish mine with spinach & and the butternut squash discs.
