It is used as a base for mille-feuilles, French galette des Rois or even apple turnovers. To make puff pastry, alternate layers of dough and layers of margarine. The puff pastry is obtained by the evaporation of the water, blocked by the layers of vegan butter
Ingrédients
450g (3 cup) Flour
9g (1, 1/2 tsp) Salt
180g (3/4 cup) Water
135g (2/3 cup) Margrine
225g (8 oz) Margarine
Préparation
Prepare all your ingredients: cold water, warm melted butter and salt,
Then gradually pour them into the flour, mixing gently with the hook
(You can also do this by hand). But be careful not to overwork the dough. You must obtain a fairly hard homogeneous paste.
Shape it into a square, avoiding bending or working it. Wrap it in cling film and let it rest for at least 2 hours in the refrigerator.
Spread the tourage margarine in parchment paper
In order to obtain a square of 15 x 20 cm or 6" x 8".
Place the rectangle of margarine in the center of the dough.
Fold both sides of the dough over to envelop it.
Give a simple roll : roll out the dough so that it is three times longer than it is wide (60 × 20 cm or 24” x 8”).
Once this thickness has been reached, fold the dough in three, like a napkin: fold one end to a third of the dough and cover with the second end: this operation is called "giving a simple turn" to the puff pastry...
Turn the dough a quarter turn to the right.
Put the puff pastry in the refrigerator for 10 minutes then repeat the operation: press the top and bottom of the puff pastry with the rolling pin so that the layers do not shift, then roll out and fold again in thirds
Place the puff pastry for at least 2 hours (overnight is better) in the refrigerator wrapped in cling film.
After resting, turn the dough a quarter turn and once again give it a simple turn. Turn the dough and finally give the fourth simple turn.
Let the dough rest in the refrigerator for at least 2 hours, covered with cling film.
Turn the dough once again a quarter turn, and give it the last single turn.
It is ready to be used, for a mille-feuille, a galette des rois, a flan etc…
