Ingredients
½ batch Vegan Brioche Dough (see recipe)
For the filling:
25g vegan margarine (about 2 tablespoons)
20g ground cinnamon (about 2 tablespoons)
40g granulated sugar (about 3 tablespoons)
For the icing:
½ cup powdered sugar
1 tablespoon non-dairy milk (such as almond or soy milk)
½ teaspoon vanilla extract
Preparation
FOR THE VEGAN BRIOCHE DOUGH:
1. Follow the Vegan Brioche Dough recipe mentioned to prepare the dough. Once the dough is ready, proceed with the cinnamon roll instructions below.
ASSEMBLING THE CINNAMON ROLLS:
1. Preheat your oven to 375°F (190°C).
2. On a floured surface, roll out the brioche dough into a rectangle of about 12x10 inch-es.
3. In a mixing bowl, emulsify the softened vegan margarine, ground cinnamon, and granulated sugar until well combined and creamy.
4. Spread the emulsified filling evenly over the entire surface of the dough.
5. Starting from the longer side of the rectangle, tightly roll up the dough into a log. You should have a long, filled cylinder of dough.
6. Using a sharp knife or a piece of unflavored dental floss, cut the dough log into indi-vidual rolls. Aim for about 1 to 1.5 inches in thickness per roll.
7. Place the cinnamon rolls in a greased baking dish, leaving a little space between each roll to allow for rising.
8. Cover the baking dish with a clean kitchen towel and let the rolls rise in a warm, draft-free place for about 30-45 minutes, or until they've doubled in size.
9. Once the rolls have risen, bake them in the preheated oven for 18-20 minutes, or un-til they're golden brown and cooked through.
FOR THE ICING:
1. While the cinnamon rolls are baking, prepare the icing. In a small bowl, whisk to-gether the powdered sugar, non-dairy milk, and vanilla extract until you have a smooth icing.
2. Once the rolls are out of the oven, let them cool for a few minutes. Then drizzle the icing over the warm rolls.
3. Serve the vegan cinnamon rolls warm and enjoy!
