About the Recipe
Mascarpone is a soft Italian acid-set cream cheese and originated in the region of Lombardy in the south of Milan. Mascarpone is the main ingredient in the modern Italian dessert known as “Tiramisu”.
Ingredients
600g Soy Yogurt
50g Coconut oil (Refined)
55g Vegan Butter
Preparation
Drain your yogurt for about 12 hours in a cheese cloth on a strainer over a big bowl, (until about half of its starting volume).
Melt your coconut and margarine (until it’s warm to the touch)
Blend your yogurt with the melted oil and butter until very smooth. (Any mixer will be fine, just be aware, it’s gonna be thick, don’t over heat your mixer)
Let it set in the fridge for at least 4 hours, ideally overnight.
