About the Recipe
Ingredients
FOR THE SPONGE LAYER:
200 ml (3/4 cup) espresso, or very strong coffee
3 tbsp Amaretto, Coffee-based liqueur or Marsala wine
6 tbsp caster sugar
20 vegan ladyfingers (savoiardi), (use one batch of my recipe or use store bought)
FOR THE CREAM LAYER:
115g (1/2 cup) Whipped Cream (use half a batch of my recipe or use store bought)
90g (1/3 cup) Vegan Butter
30g (1/4 cup) Cacao Butter
200g (1 cup) Vegan Mascarpone cheese (use half a batch of my recipe or use store bought)
80g (1/3 cup) Vegan Yogurt
30g (1/4 cup) Icing Sugar
Vanilla
FOR SERVING:
2 tbsp cocoa powder
Preparation
TO MAKE THE SPONGE LAYER
In a wide bowl, whisk together the espresso, the alcohol and caster sugar until the sugar is dissolved.
One by one, dip each ladyfinger in the coffee mixture, flip and dip again, before placing in a row on the bottom of a deep 20x20cm dish or a square/rectangular pastry ring.
Once you have a row of 9 or 10 ladyfingers (depending on the size of your dish) across the base of the dish, pause the dipping and make the cream layer.
TO MAKE THE CREAM LAYER
Whip the cream. Transfer it to the bowl of a stand mixer, or a large bowl if you’re using a hand mixer. Starting at a low speed and working your way up to high, you’ll notice the texture changing rather slowly. When the mixture is starting to thicken and it falls off the whisk in a ribbon, you’ll want to add the icing sugar and vanilla. Then, you whip until you reach a thick texture! (If you’re using my recipe, it might take around 5 mins to whip from start to finish – use that as your guide.)
In a bowl, melt together the vegan butter and cacao butter until they are hot.
Whisk the mascarpone cheese, the vegan butter and the cacao butter (hot, it’s very important) until it’s smooth, then add your yogurt, but at this stage don’t over mix, or the cream could separate (grains of fat).
Incorporate gently your whipped cream.
Pour your tiramisu cream in a piping bag with a round nozzle if you want to make you tiramisu extra fancy. But it is not mandatory!
Continue dunking and arranging the remaining sponge fingers in a second layer on top of the first then top with the remaining cream mixture. Pip your cream on top or use a pallet knife or spatula to flatten off the surface and place it in the fridge for at least 4 hours or ideally overnight.
Once ready to serve, dust with the cocoa powder.
