About the Recipe

Caramel Milk Tea is a luscious and delicious caramel-flavored sweet milk tea served with tapioca pearls. This is the easiest boba recipe you can make at home and it tastes so divine that you are bound to get addicted.

Ingredients

  • 250ml (1 cup) brewed tea (I’m using Earl Grey)

  • 45g (1/4 cup) tapioca pearls (uncooked black boba)

  • 50g (1⁄4 cup) caramel sauce or 50g (1⁄4 cup) caster sugar

  • 250ml (1 cup) plant- based milk

Preparation

Step 1 Brew the tea
  1. Boil water in a saucepan. Immediately turn off the heat and pour 1 cup boiling water into a cup.

  2. Put the black tea leaves in the cup and cover. Let the tea steep for 3 minutes, then uncover. Strain the tea and refrigerate until you are ready to assemble the Caramel Milk Tea.


Step 2 Cooking the tapioca/boba pearls
  1. Bring about 3 cups of water to a boil. Then add the brown sugar boba to the boiling water. Let them cook over medium heat until they all start to float to the surface.

  2. Cook over medium heat for 4-5 minutes then reduce heat to simmer. Let them simmer for 5 more minutes or until they become tender and chewy.

  3. Turn off the heat and keep them in the boiling water for 5 more minutes. Then drain the water and collect the cooked tapioca pearls.

  4. Keep the boba cooked in caramel syrup or brown sugar syrup until ready to assemble the boba milk tea.


Step 3 Make Caramel Milk

There are two ways to make caramel milk for this tea recipe.

  1. Method 1: Caramel Milk with Premade Caramel Sauce If using Premade Caramel Sauce or Caramel Syrup. Simply combine hot milk and caramel sauce to make sweet caramel milk. Adjust the sweetness to your liking, then refrigerate the milk, until ready to assemble.

  2. Method 2: Caramel milk with sugar. In a saucepan, add the white sugar. Turn the heat to medium and let the sugar melt. Let the sugar become golden in color. Keep your eyes on the sugar. As the sugar syrup becomes darker, add milk to it. Be sure to use warm milk, otherwise the sugar will harden upon encountering chilled milk. Now cool this caramel milk and refrigerate it.

Step 4 Assemble the Caramel Milk Tea

  1. Start by adding the tapioca pearls to the glasses. Then add the ice cubes, then the infused tea. Add half a cup of infused tea per glass. Now pour the caramel milk. Drop a boba straw and enjoy.

  2. You can add caramel mousse topped with caramel sauce to make it more decadent.
